Ingredients
– 1 pound lean ground beef
– 1 green bell pepper, small diced
– 1 medium onion, small diced
– 3 cloves garlic, minced
– 1 packet taco seasoning
– 1 can black beans, drained and rinsed
– 1 can corn, drained
– 2 cups beef broth
– 16 ounces salsa
– 8 ounces tomato sauce
– 1 cup long-grain white rice
– 2 cups shredded Colby Jack cheese, divided
– Fresh chopped cilantro for serving
– Your favorite taco toppings
Instructions
1. In a large skillet, cook the ground beef over medium heat until browned. Add in the bell pepper, onion, and garlic, and cook until vegetables are tender.
2. Stir in the taco seasoning, black beans, corn, beef broth, salsa, tomato sauce, and rice. Bring to a simmer and cover, cooking for about 20 minutes or until rice is cooked through.
3. Stir in 1 cup of cheese until melted. Top with the remaining cheese and cover until melted.
4. Serve hot with fresh cilantro and your favorite taco toppings.
Notes
– You can add in diced tomatoes, jalapenos, or bell peppers for extra flavor.
