Description

This Easy Ground Beef Wet Burrito recipe is a delicious and comforting meal that the whole family will love. Flavorful ground beef, melted cheese, and a savory sauce wrapped in a warm tortilla make for a satisfying dinner.


Ingredients

For the sauce

– 3 tablespoons unsalted butter

– 3 tablespoons cornstarch

– 2 tablespoons dark chili powder

– 1 teaspoon ground cumin

– 1 teaspoon dried oregano

– 1/2 teaspoon kosher salt

– 1 & 1/2 cups unsalted chicken stock or beef broth

– 1/2 cup tomato sauce

– 2 teaspoons granulated sugar

For assembly

– 1 pound ground beef

– 4 ounce can diced green chilies

– 1 & 1/2 tablespoons taco seasoning

– 2 cups shredded sharp cheddar cheese divided

– 8 8-inch flour tortillas

– Fresh chopped cilantro for garnish (optional)

– Favorite toppings


Instructions

1. In a saucepan, melt the butter over medium heat. Add the cornstarch, chili powder, cumin, oregano, and salt. Cook for 1 minute.

2. Gradually whisk in the chicken stock, tomato sauce, and sugar. Simmer until the sauce thickens, stirring occasionally.

3. In a separate skillet, cook the ground beef until browned. Add the green chilies and taco seasoning.

4. Preheat the oven to 350°F. Fill each tortilla with beef mixture, cheese, and some of the sauce. Roll up and place in a baking dish.

5. Pour the remaining sauce over the burritos and top with the remaining cheese. Bake for 20 minutes until bubbly.

6. Serve hot with fresh cilantro and your favorite toppings.


Notes

– To make this recipe vegetarian, substitute the ground beef with black beans or lentils.

– For a spicier version, add some diced jalapenos to the beef mixture.
