Description

Indulge in the refreshing flavors of this Easy Grasshopper Pie with a creamy mint filling and a chocolate cookie crust.


Ingredients

– 2 cups finely ground Oreo chocolate cookies, approximately 24 cookies

– 5 tablespoons unsalted butter, melted

– 2/3 cup whole milk

– 26 large marshmallows, approximately 6 ounces

– 3 tablespoons green crème de menthe liqueur

– 2 tablespoons clear creme de cacao

– 2 to 3 drops green food coloring, optional

– 1 cup heavy whipping cream, very cold

– Garnish: 2 to 3 crushed Oreo cookies


Instructions

1. In a bowl, mix the finely ground Oreo cookies with melted butter. Press into a pie dish to form the crust.

2. In a saucepan, heat the milk and marshmallows until melted. Stir in crème de menthe, creme de cacao, and food coloring.

3. Whip the cold heavy cream until stiff peaks form. Gently fold into the marshmallow mixture.

4. Pour the filling into the crust and refrigerate until set, about 4 hours.

5. Garnish with crushed Oreo cookies before serving.


Notes

For a non-alcoholic version, substitute mint extract for crème de menthe.
