This Filipino pancit recipe with chicken is a delicious and satisfying dish that is easy to make. It’s packed with flavor and the perfect comfort food for any occasion.
Ingredients
– 1 pound boneless skinless chicken breast, cut into thin strips
– 1/2 teaspoon kosher salt
– 1/2 teaspoon black pepper
– 2 cups unsalted chicken stock
– 2 tablespoons dark soy sauce
– 2 tablespoons reduced sodium soy sauce
– 3 tablespoons oyster sauce
– 2 teaspoons granulated sugar
– 3 tablespoons vegetable oil
– 1 small yellow onion, diced
– 1 & 1/2 cups green beans, cut into 1/2 inch pieces, stems removed
– 1 & 1/2 cups shredded cabbage
– 1 & 1/2 cups matchstick carrots
– 6 cloves garlic, minced
– 6 ounces bihon noodles (you can also use rice vermicelli)
– 1 lime, cut into wedges for serving
Instructions
1. Season the chicken strips with salt and pepper.
2. In a large skillet or wok, heat vegetable oil over medium heat. Add the diced onion and minced garlic, then cook until fragrant.
3. Add the seasoned chicken strips and cook until browned.
4. Pour in the chicken stock, dark soy sauce, reduced sodium soy sauce, oyster sauce, and sugar. Stir well to combine.
5. Add the green beans, cabbage, and carrots. Cook until the vegetables are tender.
6. Add the bihon noodles and cook until softened.
7. Serve the pancit hot with a squeeze of lime juice on top.
Notes
– For a vegetarian version, you can substitute tofu for the chicken.
– Feel free to add other vegetables like bell peppers or snow peas for extra color and flavor.
