Ingredients
– 3 1/2 cups chicken broth (low sodium)
– 1/2 cup hot water
– 1 cup black beans (dried, rinsed)
– 1 cup yellow onion (chopped)
– 2 bay leaves
– 1 tablespoon sugar
– Salt and pepper (to taste)
– 1/4 teaspoon ground red pepper
– 4 links country pork sausage (reduced-fat)
– 2 cups diced tomatoes
– 1 tablespoon chili powder
– 1 tablespoon Worcestershire sauce
– 1 1/2 teaspoon ground cumin
– 1 teaspoon Sriracha sauce
– 2 leaves basil (chopped, for garnish)
Instructions
1. In a crockpot, combine chicken broth, hot water, black beans, onion, bay leaves, sugar, salt, pepper, and ground red pepper.
2. Cook on low for 6-8 hours or on high for 3-4 hours until beans are tender.
3. In a skillet, cook sausage until browned. Add sausage, tomatoes, chili powder, Worcestershire sauce, cumin, and Sriracha sauce to the crockpot.
4. Cook on low for an additional 1-2 hours. Serve hot, garnished with chopped basil.
Notes
– For a spicier kick, add more Sriracha sauce to taste.
– This soup can also be made with other types of beans such as kidney beans or pinto beans.
