Instructions
- Prepare the Potatoes:
- Preheat oven to 400°F (200°C).
- Toss the halved baby potatoes with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until golden brown and tender, flipping halfway through.
- Make the Creamy Garlic Sauce:
- While the potatoes are roasting, heat a medium skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and golden brown (be careful not to burn the garlic).
- Stir in the heavy cream, garlic powder, and Italian seasoning. Simmer for 2-3 minutes until the sauce thickens slightly.
- Add the Parmesan cheese and stir until melted and smooth. Adjust the seasoning with salt and pepper to taste.
- Combine the Potatoes and Sauce:
- Once the potatoes are roasted, remove them from the oven and transfer them to a large serving bowl. Pour the creamy garlic sauce over the potatoes and toss to coat evenly.
- Serve:
