For the Steak Marinade:

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 2 tsp sugar
  • 1 tbsp cornstarch
  • 1/2 cup water or beef broth

For the Stir-Fry:

  • 2 tbsp vegetable oil, divided
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)
  • 1/2 tsp black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Marinate the Beef:
    In a bowl, combine the sliced beef with soy sauce, cornstarch, rice vinegar, and sesame oil. Toss to coat and let marinate for at least 15 minutes.
  2. Prepare the Sauce:
    In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, cornstarch, and water or beef broth. Set aside.
  3. Cook the Beef:
    Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and cook until browned, about 2–3 minutes per side. Remove and set aside.
  4. Stir-Fry the Vegetables:
    Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the bell peppers and onion for 3–4 minutes until tender-crisp. Add the minced garlic and ginger, and cook for 30 seconds until fragrant.
  5. Combine:
    Return the beef to the skillet. Pour in the prepared sauce and stir to coat everything evenly. Cook for 2–3 minutes until the sauce thickens. Sprinkle with black pepper and adjust seasoning if needed.
  6. Serve:
    Garnish with chopped green onions and serve hot over steamed rice or noodles.

Notes

  • For extra flavor, add sliced mushrooms or snap peas to the stir-fry.
  • Use low-sodium soy sauce if you prefer a less salty dish.
  • This dish can also be made with chicken or pork instead of beef.
