Description
These easy chicken birria sliders are a delicious twist on the traditional Mexican dish. Tender chicken is simmered in a flavorful birria sauce, then layered on soft Hawaiian rolls with onions, cilantro, and gooey cheese.

Chicken:
- 500–600g boneless chicken, thighs preferred
- 1 tbsp oil
- 1/2 tsp salt
- 1/2 tsp pepper
Chicken birria:
- 4 tbsp oil
- 1 1/2 yellow onions, quartered
- 3 tomatoes, quartered
- 8 garlic cloves, peeled
- 8 dried red chilies
- 2 bay leaves
- 2–3 tsp paprika
- 2 tsp oregano
- 1 1/2 tsp cumin powder
- 1 tsp cinnamon
- 2–4 chicken bouillon cubes
- 4 cups of water
- 1 tsp salt (or to taste)
Assembly:
- 24 sliders; I used King’s Hawaiian rolls
- 1/2 cup thinly sliced onion
- 1/3 cup chopped cilantro
- 1–2 cups Mexican shredded cheese
- 1–2 tablespoon butter to brush on sliders, melted
Instructions
- Prepare the chicken: Season the chicken with salt and pepper, then cook until done. Shred the chicken and set aside.
- Make the birria sauce: Sauté onions, tomatoes, garlic, and spices. Add water, bouillon cubes, and chicken. Simmer until flavors meld.
- Assemble the sliders: Layer chicken, onions, cilantro, and cheese on rolls. Brush with melted butter and bake until cheese melts.
Notes
- You can adjust the spice level by adding more or less dried red chilies.
- Feel free to customize the toppings with your favorite ingredients like avocado or pickled jalapeños.
