- Press the mixture into the bottom of a 9-inch springform pan, making sure to pack it tightly. Refrigerate for 30 minutes to set.

- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the heavy cream, powdered sugar, and vanilla extract, and beat until the mixture is thick and fluffy.
- Gently fold in the chopped pistachios and sour cream. Mix until combined.

- Spoon the cheesecake filling into the chilled crust, smoothing the top with a spatula. Refrigerate for at least 4 hours, or overnight, to set the cheesecake.
- Make the Cherry Topping:
- In a small saucepan, combine the cherries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens and becomes a syrupy consistency (about 5–7 minutes).
- Remove from heat and let it cool to room temperature.
- Serve the Cheesecake:
- Once the cheesecake is fully set, spread the cherry topping evenly over the cheesecake. Slice and serve chilled.
