Ingredients

Units Scale
  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked white rice (or brown rice)
  • 2 cups broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
  2. In a large mixing bowl, combine the cooked chicken, rice, steamed broccoli, and shredded cheddar cheese.
  3. In a separate bowl, whisk together the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the sauce over the chicken mixture and stir until evenly coated.
  5. Transfer the mixture to the prepared casserole dish, spreading it out in an even layer.
  6. If desired, sprinkle the top with Parmesan cheese and breadcrumbs for added crunch.
  7. Bake in the preheated oven for 20–25 minutes, or until the casserole is bubbly and the cheese is melted.

Notes

  • For a healthier option, use low-fat milk and reduced-fat cheese.
  • Add a crunchy topping by sprinkling breadcrumbs or crushed crackers on top before baking.
  • You can substitute fresh broccoli with frozen broccoli; just thaw and drain before using.
