    • 2 medium potatoes, peeled and diced
    • 3 tbsp butter
    • 3 tbsp all-purpose flour
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • Salt and pepper, to taste
  • Optional Toppings:
    • Cooked bacon bits
    • Fresh parsley, chopped
    • Croutons or toasted bread cubes

Instructions

  1. Cook the Beef: In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat and set aside.
  2. Sauté Vegetables: In the same pot, melt the butter over medium heat. Add the onions, carrots, and celery, and sauté for 5–7 minutes until softened.
  3. Make the Base: Stir in the flour and cook for 1–2 minutes to form a roux. Gradually whisk in the chicken broth and milk, ensuring there are no lumps.
  4. Add Potatoes and Seasoning: Add the potatoes, garlic powder, onion powder, salt, and pepper. Simmer for 10–15 minutes or until the potatoes are tender.
  5. Combine Beef and Cheese: Return the cooked ground beef to the pot. Gradually stir in the shredded cheddar cheese until melted and smooth.
  6. Serve: Ladle the soup into bowls and garnish with your favorite toppings. Enjoy warm!

  • For a thicker soup, mash a few of the potatoes with a fork before adding the cheese.
