- 3 cups (750ml) chicken broth
- 2 cups (475ml) milk
- 2 cups (225g) shredded cheddar cheese
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 medium potatoes, peeled and diced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste

- Cooked bacon bits
- Fresh parsley, chopped
- Croutons or toasted bread cubes
Instructions
- Cook the Beef: In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat and set aside.
- Sauté Vegetables: In the same pot, melt the butter over medium heat. Add the onions, carrots, and celery, and sauté for 5–7 minutes until softened.
- Make the Base: Stir in the flour and cook for 1–2 minutes to form a roux. Gradually whisk in the chicken broth and milk, ensuring there are no lumps.
- Add Potatoes and Seasoning: Add the potatoes, garlic powder, onion powder, salt, and pepper. Simmer for 10–15 minutes or until the potatoes are tender.
- Combine Beef and Cheese: Return the cooked ground beef to the pot. Gradually stir in the shredded cheddar cheese until melted and smooth.
- Serve: Ladle the soup into bowls and garnish with your favorite toppings. Enjoy warm!
