- 1 cup strawberries, sliced
- 1 cup kiwi, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/2 cup mandarin oranges, drained
- 1/2 cup grapes, sliced
- 1 tablespoon honey or apricot jam (optional, for glazing)
Instructions
- Make the Cookie Dough: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a separate large bowl, cream the butter and sugar together until light and fluffy. Add the egg, vanilla, and almond extract (if using), and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Add milk as needed to bring the dough together.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Shape and Bake: Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to about ¼-inch thickness. Cut into egg shapes using an oval cookie cutter or by hand.
- Transfer cookies to a parchment-lined baking sheet and bake for 8–10 minutes, until edges are lightly golden. Let cool completely.
- Prepare the Frosting: Beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy. Add milk as needed for a spreadable consistency.
- Decorate: Spread frosting over cooled cookies. Arrange fruit in decorative patterns to resemble Easter eggs.
- Optionally, brush fruit with a light honey or apricot jam glaze for a glossy finish.
- Serve immediately or refrigerate until ready to enjoy.
