- 250 grams medium wide rice noodles dried
- 250 grams chicken thighs or chicken breast
- 1 teaspoon soy sauce
- 3 tablespoons vegetable or canola oil divided
- 1 tablespoons minced garlic
- 1/2 onion sliced
- 2–3 Thai red chili peppers
- 4–5 baby bok choy
- 1 cup holy basil
For stir fry sauce:

- 3 teaspoons soy sauce
- 1.5 teaspoon dark soy sauce
- 2 teaspoons oyster sauce
- 1 tablespoon + 1 teaspoon fish sauce
- 2 teaspoons brown sugar
- pinch ground white pepper
- 1/4 cup chicken stock or water
Instructions
- Cook the noodles: Prepare the rice noodles according to package instructions. Drain and set aside.
- Marinate the chicken: In a bowl, mix chicken with soy sauce and set aside.
- Prepare the stir fry sauce: In a separate bowl, combine soy sauce, dark soy sauce, oyster sauce, fish sauce, brown sugar, white pepper, and chicken stock.
- Stir fry: Heat oil in a pan, add garlic, onion, chili peppers, and chicken. Cook until chicken is browned. Add bok choy and holy basil. Stir in the stir fry sauce and cooked noodles. Mix well and serve hot.
Notes
- You can adjust the amount of chili peppers to suit your spice preference.
- Feel free to add more vegetables like bell peppers or carrots for extra crunch.
