Description

This Double French Onion Beef Tips and Gravy is the perfect blend of French onion soup flavors and hearty beef tips. Slow-cooked in a rich, caramelized onion gravy, this dish is tender, flavorful, and ultra-comforting. Serve it over mashed potatoes, egg noodles, or rice for a satisfying meal that will impress every time.

For the Onions & Beef:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 large yellow or sweet onions, thinly sliced
  • 3 cloves garlic, minced
  • 2.5 lbs beef tips (sirloin or chuck roast), cut into chunks
  • Salt & pepper, to taste
  • 1 tbsp flour or cornstarch (for thickening)
  • 1/2 cup red wine (optional, for deglazing)

For the Gravy:

  • 2 cups beef broth (low-sodium recommended)
  • 1 packet French onion soup mix (or 2 tsp onion powder + 1/2 tsp salt)
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)

Optional Garnish:

  • 1/2 cup Gruyère or Swiss cheese, shredded (for a melted topping)

Instructions

  1. Caramelize the Onions

    • Heat butter and olive oil in a large skillet or Dutch oven over medium-low heat.

    • Add sliced onions and cook slowly for 30-40 minutes, stirring occasionally, until deep golden brown.

    • Stir in garlic and cook for 1 more minute. Remove onions and set aside.

  2. Sear the Beef

    • Increase heat to medium-high.

    • Season beef tips with salt and pepper.

    • Sear in batches until browned on all sides (about 3-4 minutes per batch). Remove and set aside.

  3. Build the Gravy

    • Deglaze the pan with red wine (if using), scraping up any browned bits.

    • Return caramelized onions to the pan.

    • Stir in beef broth, Worcestershire sauce, thyme, and French onion soup mix.

  4. Simmer Low & Slow

    • Return seared beef tips to the pan.

    • Cover and simmer for 1.5-2 hours (or transfer to a slow cooker on low for 6-8 hours).

    • The beef should be fork-tender, and the gravy thickened.

  • Adjust & Serve

    • If needed, mix 1 tbsp cornstarch with 2 tbsp water and stir in to thicken further.

    • Serve hot over mashed potatoes, egg noodles, or rice.

    • For extra French onion soup vibes, sprinkle with cheese and broil until melted!

  • For a deeper onion flavor, use both caramelized onions & onion powder.
