Ingredients
For the Onions & Beef:
- 2 tbsp butter
- 1 tbsp olive oil
- 3 large yellow or sweet onions, thinly sliced
- 3 cloves garlic, minced
- 2.5 lbs beef tips (sirloin or chuck roast), cut into chunks
- Salt & pepper, to taste
- 1 tbsp flour or cornstarch (for thickening)
- 1/2 cup red wine (optional, for deglazing)
For the Gravy:
- 2 cups beef broth (low-sodium recommended)
- 1 packet French onion soup mix (or 2 tsp onion powder + 1/2 tsp salt)
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
Optional Garnish:
- 1/2 cup Gruyère or Swiss cheese, shredded (for a melted topping)
Instructions
-
Caramelize the Onions
-
Heat butter and olive oil in a large skillet or Dutch oven over medium-low heat.
-
Add sliced onions and cook slowly for 30-40 minutes, stirring occasionally, until deep golden brown.
-
Stir in garlic and cook for 1 more minute. Remove onions and set aside.
-
-
Sear the Beef
-
Increase heat to medium-high.
-
Season beef tips with salt and pepper.
-
Sear in batches until browned on all sides (about 3-4 minutes per batch). Remove and set aside.
-
-
Build the Gravy
-
Deglaze the pan with red wine (if using), scraping up any browned bits.
-
Return caramelized onions to the pan.
-
Stir in beef broth, Worcestershire sauce, thyme, and French onion soup mix.
-
-
Simmer Low & Slow
-
Return seared beef tips to the pan.
-
Cover and simmer for 1.5-2 hours (or transfer to a slow cooker on low for 6-8 hours).
-
The beef should be fork-tender, and the gravy thickened.
-
-
Adjust & Serve
-
If needed, mix 1 tbsp cornstarch with 2 tbsp water and stir in to thicken further.
-
Serve hot over mashed potatoes, egg noodles, or rice.
-
For extra French onion soup vibes, sprinkle with cheese and broil until melted!
-
Notes
- For a deeper onion flavor, use both caramelized onions & onion powder.
- For extra richness, swap some beef broth for red wine.
- Make-ahead friendly—flavors deepen after a day!
