Description

Ingredients

– 2 cups rolled oats

– 2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

– 2 cups almond milk (or any milk of choice)

– 1/4 cup maple syrup or honey

– 1/2 cup unsweetened applesauce

– 1 teaspoon vanilla extract

– 1 teaspoon ground cinnamon

– 1/2 teaspoon nutmeg (optional)

– 1 teaspoon baking powder

– A pinch of salt

– 1/2 cup chopped nuts (walnuts or pecans) for added crunch (optional)

– Extra apple slices for topping (optional)


Instructions

1. Preheat the oven to 375°F (190°C) and grease a muffin tin.

2. In a large mixing bowl, combine the rolled oats, diced apples, almond milk, maple syrup or honey, applesauce, vanilla extract, cinnamon, nutmeg, baking powder, salt, and chopped nuts.
