For the Cookie Dough:

- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
For the Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 tsp vanilla extract
- 1 egg yolk
For the Topping:
- 1/4 cup (40g) mini chocolate chips (optional)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. - Make the Cookie Dough:
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, then add the vanilla extract. Gradually mix in the dry ingredients until a dough forms. - Make the Cheesecake Filling:
In a separate bowl, beat together the cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy. - Form the Cookies:
Scoop a tablespoon of cookie dough and flatten it slightly into a disc. Place a small spoonful of cheesecake filling in the center of the disc, then top with another tablespoon of cookie dough. Pinch the edges together to seal the filling inside, forming a ball. - Add the Topping:
