For the Cookie Dough:

  • 1 1/2 cups (180g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 tsp baking soda

  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg yolk

For the Topping:

  • 1/4 cup (40g) mini chocolate chips (optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Make the Cookie Dough:
    In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, then add the vanilla extract. Gradually mix in the dry ingredients until a dough forms.
  3. Make the Cheesecake Filling:
    In a separate bowl, beat together the cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy.
  4. Form the Cookies:
    Scoop a tablespoon of cookie dough and flatten it slightly into a disc. Place a small spoonful of cheesecake filling in the center of the disc, then top with another tablespoon of cookie dough. Pinch the edges together to seal the filling inside, forming a ball.
  5. Add the Topping:
    Gently press a few mini chocolate chips into the top of each cookie ball for extra chocolate flavor.
  6. Bake the Cookies:
    Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until the cookies are firm around the edges but slightly soft in the center.
  7. Cool and Serve:
