Spicy Peanut Sauce:

  • 2 tablespoons rice vinegar
  • 2 tablespoons peanut butter
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried red chili flakes
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare Cucumbers: Sprinkle salt over cucumber slices and let sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.
  2. Make Spicy Peanut Sauce: In a bowl, mix together peanuts, soy sauce, rice vinegar, peanut butter, honey, garlic, chili flakes, black pepper, and parsley.
