Description

These Cuban Sandwich Potato Skins are a delicious twist on the classic Cuban sandwich. Loaded with shredded Swiss cheese, pulled pork, deli ham, and pickles, these potato skins are bursting with flavor.

Potato Skins:

  • 6 small to medium Russet potatoes, rinsed
  • 2 tablespoons olive oil
  • Kosher salt and coarse black pepper

Filling:

  • 1 1/2 cups shredded Swiss cheese
  • 8 ounces leftover or store-bought pulled pork
  • 8 ounces black forest deli ham, sliced
  • 1/2 cup bread and butter pickle chips

Sauce:

  • 1/4 cup dijon mustard
  • 1/4 cup prepared yellow mustard
  • 2 tablespoons white wine vinegar
  • 1 large garlic clove, grated
  • 1 tablespoon honey
  • 1/2 to 3/4 teaspoon cayenne pepper or chili powder
  • Kosher salt and coarse black pepper

Instructions

  1. Preheat: Preheat your oven to 400°F (200°C).
  2. Bake Potatoes: Rub the potatoes with olive oil, salt, and pepper. Bake for about 50-60 minutes until tender.
  3. Prepare Filling: Scoop out the potato flesh, leaving a thin layer. Fill with Swiss cheese, pulled pork, ham, and pickles.
  4. Make Sauce: Mix all sauce ingredients in a bowl.
  5. Bake Again: Bake filled potato skins for 10-15 minutes until cheese is melted. Serve with sauce drizzled on top.
