For the Salmon Bites:
- 1 lb fresh salmon, cut into bite-sized cubes
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/4 cup cold water
- 1 egg, beaten
- Vegetable oil, for frying
For the Bang Bang Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha sauce (adjust for spice level)
- 1 teaspoon honey
- 1 teaspoon rice vinegar
For Garnish (Optional):
- Chopped green onions
- Sesame seeds
Instructions
- Prepare the Bang Bang sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar until smooth. Set aside.
- In a shallow dish, mix together flour, cornstarch, garlic powder, paprika, salt, and pepper.
- In another dish, whisk the egg and cold water together to create a batter.
- Dip the salmon cubes into the batter, then coat them with the flour mixture. Shake off any excess flour.
- Heat vegetable oil in a large pan over medium-high heat. Once the oil is hot, carefully fry the salmon cubes in batches, cooking for 2-3 minutes until golden brown and crispy.
- Remove the salmon from the oil and drain on paper towels.
- Toss the crispy salmon bites in the prepared Bang Bang sauce until well coated.
- Garnish with chopped green onions and sesame seeds. Serve hot and enjoy!
Notes
- For extra crunch, you can double coat the salmon by dipping it back into the batter and flour mixture.
- If you prefer a lighter version, bake the salmon bites at 400°F (200°C) for 12-15 minutes instead of frying.
- Adjust the amount of Sriracha in the sauce to your preferred spice level.
