Instructions

  2. Make the Fritter Mixture: In a large bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, green onions, garlic, oregano, salt, and pepper. Stir until everything is well incorporated.
  3. Fry the Fritters: Heat olive oil in a large skillet over medium heat. Scoop spoonfuls of the zucchini mixture and shape them into patties. Carefully add them to the hot skillet and cook for 2-3 minutes on each side, or until golden and crispy. Remove from the pan and drain on paper towels.
