For the Zucchini Fritters:
- 2 medium zucchini, grated
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 1/4 cup green onions, finely chopped
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
For the Garlic-Dill Yogurt Sauce:
- 1 cup plain Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 garlic clove, minced
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
- Make the Fritter Mixture: In a large bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, green onions, garlic, oregano, salt, and pepper. Stir until everything is well incorporated.
- Fry the Fritters: Heat olive oil in a large skillet over medium heat. Scoop spoonfuls of the zucchini mixture and shape them into patties. Carefully add them to the hot skillet and cook for 2-3 minutes on each side, or until golden and crispy. Remove from the pan and drain on paper towels.
- Prepare the Sauce: In a small bowl, combine Greek yogurt, fresh dill, minced garlic, lemon juice, salt, and pepper. Stir until smooth and well combined.
- Serve: Serve the crispy zucchini fritters hot with a generous dollop of garlic-dill yogurt sauce on the side for dipping.
Notes
- If you prefer a healthier version, you can bake the fritters in the oven at 400°F (200°C) for 15-20 minutes, flipping halfway through.
- You can add other herbs like parsley or chives to the fritters or sauce for extra flavor.
- Zucchini fritters can be stored in the fridge for up to 3 days. Reheat in a skillet or oven for a crispy texture
