Ingredients

– Peanut oil for frying

– 2 large eggs

– 2 tablespoons buttermilk

– 1 tablespoon hot sauce

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

– 1/2 teaspoon creole seasoning

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon black pepper

– 2 pounds extra large shrimp, tail-on (26-30 count)

– For the cornmeal mixture:

– 1 cup all-purpose flour

– 1/2 cup yellow cornmeal

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon creole seasoning

– 1 teaspoon smoked paprika

– 1/2 teaspoon black pepper

– Kosher salt to taste


Instructions

1. In a large bowl, whisk together eggs, buttermilk, hot sauce, garlic powder, onion powder, creole seasoning, smoked paprika, and black pepper.

2. Add the shrimp to the egg mixture and toss to coat evenly. Let it marinate for at least 30 minutes.

3. In a separate bowl, combine all-purpose flour, yellow cornmeal, garlic powder, onion powder, creole seasoning, smoked paprika, black pepper, and salt.

4. Dredge the marinated shrimp in the cornmeal mixture, ensuring they are fully coated.

5. Heat peanut oil in a large skillet over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side.

6. Remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

7. Serve the crispy fried shrimp hot with your favorite dipping sauce or side dish.


Notes

– For an extra kick, add a dash of cayenne pepper to the cornmeal mixture.

– To make a lighter version, you can bake the shrimp in the oven instead of frying them.
