Description

These Smash Burgers are juicy, crispy-edged, and packed with flavor, thanks to a quick sear on a hot griddle. Topped with a creamy, smoky Baconnaise Sauce, crispy bacon, melted cheese, and nestled in a toasted bun, this burger is pure indulgence in every bite!

For the Smash Burgers:

1 lb ground beef (80/20 blend for best flavor)

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

4 slices cheddar cheese (or American cheese)

4 brioche or hamburger buns, toasted

4 slices cooked crispy bacon

1 tbsp butter (for toasting buns)

1 tbsp vegetable oil (for cooking)

For the Baconnaise Sauce:

1/2 cup mayonnaise

2 tbsp cooked bacon, finely chopped

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1 tbsp pickle juice (or lemon juice)

1/2 tsp black pepper


Instructions

  1. Prepare the Baconnaise Sauce: In a small bowl, whisk together mayonnaise, chopped bacon, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, onion powder, pickle juice, and black pepper. Cover and refrigerate until ready to use.
  2. Toast the Buns: Heat butter in a pan over medium heat and toast the brioche buns until golden brown. Set aside.
  3. Shape the Burger Patties: Divide the ground beef into 4 equal portions (about 4 oz each). Roll them into loose balls without pressing too hard.
  4. Smash the Burgers: Heat a cast-iron skillet or griddle over high heat. Add vegetable oil and place a beef ball onto the pan. Immediately smash it down with a spatula (using parchment paper helps prevent sticking) until it’s very thin.
  5. Season & Cook: Sprinkle each patty with salt, pepper, and garlic powder. Cook for 1.5-2 minutes until crispy and browned. Flip, add a slice of cheese, and cook for another 1 minute. Remove from heat.
  6. Assemble the Burgers: Spread Baconnaise Sauce on both sides of the toasted buns. Place the cheesy smash burger patty, top with crispy bacon, and close the bun.
  7. Serve Immediately with fries, pickles, or your favorite sides!

Notes

  • For an extra crispy crust, press the burger only once and avoid moving it while cooking.
  • If you love double-stacked burgers, use two thinner patties per burger for even more juiciness.
  • Swap cheddar for American cheese for a more classic smash burger experience.
