  • 2 large eggs (beaten)
  • 3/4 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (divided)

For the Garlic Sauce:

  • 4 cloves garlic (minced)
  • 3/4 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons grated parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Prepare the Chicken:

    • Season chicken with salt, pepper, and Italian seasoning.

    • Set up three bowls: one with flour, one with beaten eggs, and one with a mix of panko and parmesan.

    • Dredge each chicken breast in flour, then dip in eggs, and finally coat in the parmesan-panko mixture, pressing to adhere.

  2. Cook the Chicken:

    • Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.

    • Cook chicken for 4-5 minutes per side until golden brown and cooked through.

    • Transfer to a plate and keep warm.

  3. Make the Garlic Sauce:

    • In the same pan, melt the remaining tablespoon of butter.

    • Add minced garlic and sauté for 30 seconds until fragrant.

    • Pour in chicken broth, scraping up any browned bits. Stir in heavy cream and red pepper flakes. Simmer for 2-3 minutes until thickened.

    • Stir in 2 tablespoons of parmesan cheese for extra flavor.

  4. Serve:
