Description

These Crispy Parmesan Cauliflower Steaks are a flavorful and satisfying vegetarian dish. The cauliflower is coated in a Parmesan and spice mixture, then baked until crispy. Serve with a creamy avocado dip for a delicious meal.

Main Dish:

  • 1 cauliflower head
  • 1/4 cup olive oil
  • 2 tbs grated parmesan
  • 2 cloves garlic
  • 1/2 tsp each paprika, onion powder + salt
  • 1/4 tsp chili pepper flakes
  • 1/2 cup freshly grated parmesan cheese
  • Optional Garnish: fresh chives, chopped

Avocado Dip:

  • 1 avocado, halved
  • 2 scallions, rough chop
  • 1/2 lime, juiced
  • 1 jalapeño, deseeded + rough chop
  • 1 tbs olive oil
  • 1 tbs grated parmesan (or nutritional yeast)
  • 1/4 cup parsley
  • 1/3 cup water
  • salt + pepper to taste

Instructions

  1. Prep Cauliflower: Preheat oven to 425°F. Cut cauliflower into steaks, keeping the core intact to hold them together.
  2. Make Parmesan Mixture: In a bowl, mix olive oil, grated parmesan, garlic, paprika, onion powder, salt, and chili flakes.
  3. Coat Cauliflower: Brush cauliflower steaks with Parmesan mixture, then coat with freshly grated parmesan.
  4. Bake: Place on a baking sheet and bake for 25-30 mins until golden and crispy.
  5. Make Avocado Dip: Blend all dip ingredients until smooth.
  6. Serve: Serve cauliflower steaks with avocado dip and garnish with fresh chives.

Notes

  • For extra flavor, add a squeeze of lemon juice to the avocado dip.
  • You can customize the spice level by adjusting the amount of chili pepper flakes.
