Main Dish:
- 1 cauliflower head
- 1/4 cup olive oil
- 2 tbs grated parmesan
- 2 cloves garlic
- 1/2 tsp each paprika, onion powder + salt
- 1/4 tsp chili pepper flakes
- 1/2 cup freshly grated parmesan cheese
- Optional Garnish: fresh chives, chopped
Avocado Dip:
- 1 avocado, halved
- 2 scallions, rough chop
- 1/2 lime, juiced
- 1 jalapeño, deseeded + rough chop
- 1 tbs olive oil
- 1 tbs grated parmesan (or nutritional yeast)
- 1/4 cup parsley
- 1/3 cup water
- salt + pepper to taste
Instructions
- Prep Cauliflower: Preheat oven to 425°F. Cut cauliflower into steaks, keeping the core intact to hold them together.
- Make Parmesan Mixture: In a bowl, mix olive oil, grated parmesan, garlic, paprika, onion powder, salt, and chili flakes.
- Coat Cauliflower: Brush cauliflower steaks with Parmesan mixture, then coat with freshly grated parmesan.
- Bake: Place on a baking sheet and bake for 25-30 mins until golden and crispy.
- Make Avocado Dip: Blend all dip ingredients until smooth.
- Serve: Serve cauliflower steaks with avocado dip and garnish with fresh chives.
Notes
- For extra flavor, add a squeeze of lemon juice to the avocado dip.
- You can customize the spice level by adjusting the amount of chili pepper flakes.
