Description

These crispy fried lasagna rolls are a delicious twist on traditional lasagna. Filled with gooey mozzarella and coated in a crunchy cracker crust, they are sure to be a hit at your next gathering.


Ingredients

Spinach Alfredo Sauce:

  • 2 tbsp unsalted butter
  • 1/4 medium onion, finely chopped
  • 1 tsp minced garlic
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper
  • 1/2 tsp chili flakes
  • 1/2 tsp Italian seasoning
  • 2 tbsp all purpose flour
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped spinach (frozen or fresh) – optional

Coating:

  • 1 1/2 cups crushed crackers (or bread crumbs)
  • 1/4 cup shredded parmesan cheese
  • 1/2 tsp chili flakes

Assembly:

  • 8 lasagna sheets, boiled to al dente according to package instructions and separated
  • 4 Mozzarella string cheese sticks
  • 2 large eggs

Frying & serving:

  • Oil to deep fry
  • Tomato sauce to serve (optional)

Instructions

  1. Make the Spinach Alfredo Sauce: In a saucepan, melt butter and sauté onion and garlic. Add seasonings, flour, milk, and cream. Stir in Parmesan and spinach. Cook until thickened.
  2. Assemble the Rolls: Place a spoonful of sauce on a lasagna sheet, top with a cheese stick, and roll up. Dip in beaten eggs, then coat in cracker mixture.
  3. Fry the Rolls: Heat oil in a pan and fry rolls until golden brown. Serve with tomato sauce if desired.

Notes

  • You can customize the filling with different cheeses or meats.
  • For a healthier version, bake the rolls instead of frying.
