Ingredients

Units Scale

For the Base:

  • 10 small corn tortillas, cut into 1-inch strips
  • 1 lb ground beef (or ground turkey)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) tomato sauce (or enchilada sauce)

For the Layers:

  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Optional Toppings:

  • Sour cream
  • Chopped cilantro
  • Sliced avocado
  • Lime wedges

Instructions

  1. Cook the Ground Beef:

  • In a large skillet over medium heat, cook ground beef until browned (about 8-10 minutes). Drain excess fat. Add diced onion and garlic, cooking for another 2-3 minutes until softened.
  1. Add Spices & Sauce:

  • Stir in cumin, chili powder, salt, and pepper. Cook for 1 minute, then pour in the tomato sauce. Let simmer for 5 minutes to develop flavor.
  1. Preheat & Prepare the Casserole:

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  1. Layer the Casserole:

  • Arrange half of the tortilla strips in the dish. Spread half of the beef mixture over the tortillas, then sprinkle with half of the cheese. Repeat with remaining tortillas, beef, and cheese.
  1. Bake:

  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, until the cheese is golden and bubbly.
  • Serve & Enjoy:

  • Let the casserole rest for 5 minutes before serving. Top with sour cream, cilantro, or avocado if desired.

Notes

  • For extra crunch: Briefly bake tortilla strips at 350°F for 5 minutes before layering.
  • For a vegetarian version: Use black beans or a plant-based meat substitute.
  • For a spicier kick: Add cayenne pepper or diced jalapeños to the beef mixture.
