Description

This Creamy Turkey Noodle Soup is the perfect cozy dish to use up leftover turkey. The creamy base, hearty vegetables, and tender noodles come together for a comforting, flavorful meal that’s easy to make and sure to satisfy the whole family.


Ingredients

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups turkey or chicken broth
  • 2 cups cooked turkey, shredded
  • 1 1/2 cups egg noodles
  • 1/2 teaspoon thyme (dried or fresh)
  • 1/2 teaspoon sage (optional)
  • 1 1/2 cups heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are tender. Add the minced garlic and cook for another minute.
  2. Add Broth and Seasonings: Pour in the turkey (or chicken) broth and stir in the thyme, sage (if using), salt, and pepper. Bring to a boil and reduce to a simmer for 10 minutes.
  3. Cook the Noodles: Add the egg noodles to the soup and cook for 8-10 minutes, until the noodles are tender.
  4. Stir in the Turkey: Add the shredded turkey and stir until well combined.
  5. Make it Creamy: Pour in the heavy cream and stir. Let the soup simmer for an additional 5 minutes until it thickens slightly.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Serve warm.

Notes

  • Leftover Turkey: This is a great recipe to use up Thanksgiving turkey or any leftover cooked turkey.
  • Make it Lighter: For a lighter version, substitute the heavy cream with half-and-half or whole milk.
  • Freezing: The soup can be frozen without the cream and noodles. When reheating, add fresh noodles and cream for the best texture.
