Scale
- 20 oz cheese tortellini (fresh or frozen)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1/2 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 tsp dried basil
- Salt and pepper, to taste
- 1 cup fresh spinach (optional)
- 1/2 cup grated Parmesan cheese
- Fresh basil, chopped (for garnish)
Instructions
- Cook the Tortellini:
Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually about 3–4 minutes for fresh tortellini or 7–8 minutes for frozen. Drain and set aside. - Sauté the Garlic and Tomatoes:
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute, until fragrant. Add the diced tomatoes and cook for another 3–4 minutes, stirring occasionally. - Make the Creamy Sauce:
Add the chicken broth and bring the mixture to a simmer. Stir in the heavy cream, dried basil, salt, and pepper. Allow the sauce to cook for 5–7 minutes, stirring frequently, until it thickens slightly. - Combine Tortellini with Sauce:
Add the cooked tortellini to the skillet with the creamy sauce. Toss gently to coat the pasta in the sauce. Stir in the spinach (if using) and let it wilt for about 2 minutes. - Finish the Dish:
Stir in the grated Parmesan cheese, mixing until melted and combined. Adjust seasoning with additional salt and pepper, if desired. - Serve:
Divide the creamy tortellini between plates and garnish with fresh basil. Serve warm.
Notes
- You can use frozen spinach instead of fresh for a more convenient option.
- Add cooked chicken or sausage for extra protein.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
