Description

  • 1 tablespoon butter

For the Sauce & Rice:

  • 1 tablespoon butter
  • 1/2 cup diced onion
  • 3 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 3/4 cup heavy cream (or half-and-half)
  • 1 cup long-grain white rice (uncooked)
  • Fresh parsley (for garnish)

Instructions

  1. Sear the Chicken:

    • Season chicken with salt, pepper, paprika, and Italian seasoning.

    • Heat olive oil and butter in a large skillet over medium-high heat.

    • Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.

  2. Sauté the Aromatics:

    • In the same pan, add butter, onions, and garlic.

    • Cook for 2 minutes until softened, then stir in flour and cook for 1 minute.

  3. Make the Creamy Sauce:

    • Gradually whisk in chicken broth, scraping up browned bits.

    • Stir in heavy cream and let it simmer for 2-3 minutes until thickened.

  4. Add the Rice & Chicken:

    • Pour in the uncooked rice, then nestle the chicken back into the pan.

    • Cover and let simmer for 15-18 minutes until the rice is tender and sauce is creamy.

  5. Serve & Enjoy:

    • Remove from heat and let sit for a few minutes.

    • Garnish with fresh parsley before serving.
