  • 2 tbsp butter
  • 1 large shallot, minced
  • 1 tbsp garlic, minced
  • 1 lb baby bella mushrooms, sliced
  • 5 cups beef broth
  • 1/4 cup white wine
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp dried dill
  • 1/2 tsp paprika
  • 1/4 tsp dried thyme
  • 1 cup pearl couscous
  • 1/2 cup half and half

For Serving:

  • Sour cream
  • Crusty Bread

Instructions

  1. Sauté Aromatics: In a large pot, melt butter and sauté shallot and garlic until fragrant.
  2. Add Mushrooms: Add sliced mushrooms and cook until they release their juices.
  3. Simmer: Pour in beef broth, white wine, Worcestershire sauce, salt, dill, paprika, and thyme. Bring to a simmer.
  4. Cook Couscous: Stir in pearl couscous and cook until tender.
