Description

  • 1 lb large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for 1 minute, until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-5 minutes until the sauce thickens slightly.
  5. Add the Italian seasoning, red pepper flakes (if using), and season with salt and pepper to taste.
  6. Reduce the heat to low and stir in the shredded mozzarella and grated Parmesan cheese. Continue stirring until the cheese is melted and the sauce is smooth.
  7. Add the cooked pasta and shrimp to the skillet, tossing everything together to coat in the creamy sauce.
  8. Serve the pasta in bowls, garnished with fresh parsley.

Notes

  • You can swap the mozzarella for another melting cheese like provolone or fontina.
  • Add sautéed vegetables like spinach, mushrooms, or cherry tomatoes for extra flavor and texture.
  • For a lighter version, you can use half-and-half instead of heavy cream.
