- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup uncooked small pasta (such as elbow macaroni or rotini)
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley (for garnish)
Instructions
- Cook the ground chicken:
In a large pot, heat the olive oil over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon as it cooks. Remove any excess fat. - Sauté the vegetables:
Add the onion, garlic, carrots, celery, and zucchini to the pot. Cook for 5-7 minutes until the vegetables are softened. - Add the liquids and seasonings:
Stir in the diced tomatoes (with juices), chicken broth, heavy cream, Italian seasoning, basil, oregano, salt, and pepper. Bring to a simmer. - Cook the pasta:
Add the uncooked pasta to the pot and cook for 10-12 minutes, or until the pasta is tender and the soup has thickened slightly. - Finish the soup:
Stir in the grated Parmesan cheese and cook for an additional 2-3 minutes to melt the cheese into the soup. - Serve:
Ladle the soup into bowls and garnish with fresh basil or parsley. Enjoy!
Notes
- For a lower-fat version: Use half-and-half instead of heavy cream.
- Add more veggies: You can add spinach, kale, or bell peppers for extra greens and color.
- Use different pasta: You can substitute any type of small pasta or even rice for the pasta if preferred.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
