- 2 lb. boneless skinless chicken breasts
- 1/4 cup all purpose flour
- 1/4 cup chopped cilantro, plus more for topping
- 2 tablespoon coconut oil
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 cup coconut milk
- 2/3 cup chicken broth
- 1 tablespoon brown sugar or sub coconut sugar
- 2 limes
- 1 green onion, chopped, for garnish
- Salt and pepper, to taste
Instructions
- Coat the chicken: Dredge chicken breasts in flour seasoned with salt and pepper.
- Sear the chicken: In a skillet, heat coconut and olive oil. Sear chicken until golden brown on both sides. Remove and set aside.
- Make the sauce: In the same skillet, sauté garlic, then add coconut milk, chicken broth, brown sugar, and lime juice. Simmer until thickened.
