Description

  • 3 cups cooked chicken, shredded (rotisserie preferred)
  • 12 lasagna noodles (uncooked)
  • 2 cups shredded mozzarella cheese (for topping)

Cheese Mixture:

  • 1 large egg, beaten
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella
  • 1 cup freshly grated Parmesan
  • 1/2 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 16 oz frozen spinach, thawed and squeezed

Cream Sauce:

  • 2 tablespoons butter
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 1/3 cups heavy cream
  • 1/2 teaspoon salt
  • Pepper to taste

Instructions

  1. Prepare Cheese Mixture: Combine all cheese mixture ingredients in a bowl and mix well.
  2. Make Cream Sauce: In a saucepan, sauté onion and garlic in butter. Add cream cheese, heavy cream, salt, and pepper. Cook until creamy.
  3. Assembly: Layer lasagna noodles, chicken, cheese mixture, and cream sauce. Repeat layers and top with mozzarella.
  4. Bake: Cover with foil and bake at 350°F for 45 minutes, then uncover and bake for another 15 minutes until bubbly.

Notes

  • You can add mushrooms or bell peppers to the cheese mixture for extra flavor.
  • Allow the lasagna to rest for 10-15 minutes before serving to set.
