Main Event:
- 3 cups cooked chicken, shredded (rotisserie preferred)
- 12 lasagna noodles (uncooked)
- 2 cups shredded mozzarella cheese (for topping)
Cheese Mixture:
- 1 large egg, beaten
- 15 oz ricotta cheese
- 2 cups shredded mozzarella
- 1 cup freshly grated Parmesan
- 1/2 teaspoon salt
- 1 teaspoon Italian seasoning
- 16 oz frozen spinach, thawed and squeezed
Cream Sauce:
- 2 tablespoons butter
- 1/2 medium onion, chopped
- 4 cloves garlic, minced
- 8 oz cream cheese, softened
- 1 1/3 cups heavy cream
- 1/2 teaspoon salt
- Pepper to taste
Instructions
- Prepare Cheese Mixture: Combine all cheese mixture ingredients in a bowl and mix well.
- Make Cream Sauce: In a saucepan, sauté onion and garlic in butter. Add cream cheese, heavy cream, salt, and pepper. Cook until creamy.
- Assembly: Layer lasagna noodles, chicken, cheese mixture, and cream sauce. Repeat layers and top with mozzarella.
- Bake: Cover with foil and bake at 350°F for 45 minutes, then uncover and bake for another 15 minutes until bubbly.
Notes
- You can add mushrooms or bell peppers to the cheese mixture for extra flavor.
- Allow the lasagna to rest for 10-15 minutes before serving to set.
