  • 6 slices bacon, diced
  • 1 small onion, finely chopped

  • 1 cup heavy cream

  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter (for cooking)

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt, pepper, and paprika.
  2. Cook the bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon and set aside, leaving the bacon grease in the skillet.
  3. Sear the chicken: Add olive oil or butter to the skillet if needed. Cook the chicken breasts in the bacon grease over medium-high heat, about 4-5 minutes per side, until golden brown (they don’t need to be fully cooked yet). Remove and set aside.
  4. Sauté the aromatics: In the same skillet, add the onion and garlic. Cook for 2-3 minutes, stirring frequently, until softened and fragrant.
  5. Make the sauce: Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Stir in the heavy cream, Parmesan cheese, Dijon mustard, and Italian seasoning. Let the sauce simmer for 2-3 minutes until slightly thickened.
  6. Combine everything: Return the chicken breasts to the skillet along with the cooked bacon. Simmer for 8-10 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  7. Serve: Garnish with fresh parsley and serve warm over pasta, rice, or mashed potatoes.

Notes
