- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 tablespoons all purpose flour
- 6 chicken breast cutlets
- 8 oz. button mushrooms, whole
- 1 shallot, finely diced
- 2 garlic cloves, minced
- 1/4 cup white wine
- 1/3 cup chicken stock
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme, sprigs removed
- 1/2 teaspoon dijon mustard *optional*
- 4 oz. brie cheese
- 2 tablespoons parmigiano reggiano
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Prepare the Chicken: Season the chicken breast cutlets with salt and pepper. Dredge in flour and cook in butter and oil until golden. Remove from pan and set aside.
- Sauté Mushrooms: In the same pan, sauté mushrooms until browned. Add shallots and garlic, cook until softened.
- Deglaze and Simmer: Pour in white wine to deglaze the pan. Add chicken stock, cream, thyme, and mustard. Simmer until sauce thickens.
- Finish the Dish: Return chicken to the pan, add brie and parmigiano reggiano. Cook until cheese melts and sauce is creamy.
