Description

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons all purpose flour
  • 6 chicken breast cutlets
  • 8 oz. button mushrooms, whole
  • 1 shallot, finely diced
  • 2 garlic cloves, minced
  • 1/4 cup white wine
  • 1/3 cup chicken stock
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme, sprigs removed
  • 1/2 teaspoon dijon mustard *optional*
  • 4 oz. brie cheese
  • 2 tablespoons parmigiano reggiano
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breast cutlets with salt and pepper. Dredge in flour and cook in butter and oil until golden. Remove from pan and set aside.
  2. Sauté Mushrooms: In the same pan, sauté mushrooms until browned. Add shallots and garlic, cook until softened.
  3. Deglaze and Simmer: Pour in white wine to deglaze the pan. Add chicken stock, cream, thyme, and mustard. Simmer until sauce thickens.
  4. Finish the Dish: Return chicken to the pan, add brie and parmigiano reggiano. Cook until cheese melts and sauce is creamy.
