  • 4 large bell peppers (any color)
  • 1/2 lb (225g) shrimp, peeled and deveined
  • 1/2 lb (225g) crab meat (preferably lump)
  • 1/2 cup cream cheese, softened

  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup breadcrumbs (optional for topping)

Instructions

  1. Prepare the bell peppers: Slice the tops off the bell peppers, remove the seeds, and blanch them in boiling water for 3-4 minutes. Drain and set aside.
  2. Prepare the filling: In a bowl, mix together shrimp, crab meat, cream cheese, mayonnaise, Parmesan cheese, lemon juice, garlic powder, paprika, salt, pepper, and parsley.
  3. Stuff the peppers: Fill the bell peppers with the seafood mixture and top with breadcrumbs, if desired.
  4. Bake: Place the stuffed bell peppers in a baking dish and bake at 375°F (190°C) for 20-25 minutes, or until the peppers are tender and the filling is heated through.
  5. Serve: Garnish with additional parsley and enjoy!
