Description

These Honey Mustard Roasted Potatoes are the perfect side dish to brighten up your cozy winter dinners.   • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh rosemary, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, honey, Dijon mustard, whole grain mustard, garlic powder, onion powder, salt, and pepper. Stir until the glaze is well mixed.
  3. Add the halved baby potatoes to the bowl and toss to coat them evenly with the honey mustard mixture.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, flipping them halfway through for even roasting.
  6. Once the potatoes are done, remove them from the oven and garnish with fresh chopped rosemary.
  7. Serve warm as a delicious side dish.

Notes

For extra flavor, you can add a squeeze of fresh lemon juice over the potatoes before serving. If you prefer a spicier kick, increase the amount of Dijon mustard or add a pinch of cayenne pepper to the glaze.
