- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (10 oz) Rotel tomatoes with green chilies
- 1 packet ranch seasoning mix
- 1 packet taco seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup sour cream (optional)
- 1 tbsp olive oil for sautéing (if needed)
Instructions
- Cook the Meat:
- In a large pot or skillet, heat olive oil over medium heat. Add ground beef or turkey and cook until browned, breaking up the meat with a spoon. Drain excess fat if necessary.
- Sauté the Vegetables:
- Add diced onion and garlic to the pot and sauté for 2-3 minutes until softened and fragrant.
- Add the Beans and Corn:
- Stir in the kidney beans, black beans, and corn. Mix well to combine.
- Add the Tomatoes and Seasonings:
