Elevate your steak game with this flavorful Cowboy Butter that combines garlic, lemon, spices, and herbs. Perfect for topping high-quality steaks like ribeye or tenderloin filet.

Steak:

    • 2 – 2.5 pounds high-quality steak such as ribeye or tenderloin filet
    • 23 tbsp avocado oil
    • kosher salt to taste
    • freshly cracked black pepper to taste

Cowboy Butter:

  • 1 stick butter, mostly melted
  • 4 cloves garlic, minced
  • 1/2 lemon, zested + 1 tablespoon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne or red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes or cayenne powder
  • 1 tablespoon chives or green onions, sliced
  • 2 tablespoons fresh parsley, minced
  • salt and pepper to taste
  • optional: rosemary sprig and smashed garlic for the cast iron preparation

Instructions

  1. Prepare the Cowboy Butter: In a bowl, combine melted butter, minced garlic, lemon zest and juice, dijon mustard, paprika, cayenne, thyme, red pepper flakes, chives, parsley, salt, and pepper. Mix well.
  2. Cook the Steak: Season the steak with salt and pepper. Heat a cast-iron skillet with avocado oil. Cook the steak to desired doneness. Top with Cowboy Butter while resting.

Notes

  • Adjust the spice level by adding more or reducing cayenne or red pepper flakes.
  • Allow the steak to rest before slicing to retain juices.
