Main Ingredients:
- 2 whole heads of garlic, peeled
- 1 tablespoon olive oil

- 2 sprigs fresh thyme

- 4 egg yolks
- 1/2 cup grated Parmesan cheese

Instructions
- Prep Garlic: Preheat oven to 400°F. Toss peeled garlic with olive oil, place on a baking sheet, and roast for 20-25 minutes until golden.
- Sauté Onion: In a large pot, melt butter and sauté chopped onion until translucent.
- Add Broth & Herbs: Pour in broth, roasted garlic, thyme, bay leaves, salt, and pepper. Simmer for 10-15 minutes.
- Prepare Egg Mixture: In a bowl, whisk egg yolks and Parmesan cheese.
- Temper Eggs: Slowly add a ladle of hot soup to the egg mixture while whisking constantly.
- Finish Soup: Stir the egg mixture back into the soup, cook for a few minutes until thickened. Remove thyme sprigs and bay leaves.
- Serve: Ladle soup into bowls, garnish with fresh parsley, and serve with crusty bread.
