Description

  • 2 whole heads of garlic, peeled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 tablespoons butter
  • 6 cups chicken or vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste

Additional Ingredients:

  • 4 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Crusty bread, for serving
  • Fresh parsley (optional for garnish)

Instructions

  1. Prep Garlic: Preheat oven to 400°F. Toss peeled garlic with olive oil, place on a baking sheet, and roast for 20-25 minutes until golden.
  2. Sauté Onion: In a large pot, melt butter and sauté chopped onion until translucent.
  3. Add Broth & Herbs: Pour in broth, roasted garlic, thyme, bay leaves, salt, and pepper. Simmer for 10-15 minutes.
  4. Prepare Egg Mixture: In a bowl, whisk egg yolks and Parmesan cheese.
  5. Temper Eggs: Slowly add a ladle of hot soup to the egg mixture while whisking constantly.
  6. Finish Soup: Stir the egg mixture back into the soup, cook for a few minutes until thickened. Remove thyme sprigs and bay leaves.
  7. Serve: Ladle soup into bowls, garnish with fresh parsley, and serve with crusty bread.
