Description
A creamy and comforting broccoli cheddar soup that tastes just like the one from Panera Bread. Perfect for a cozy night in or a comforting meal.
Ingredients
1/2 cup + 2 tablespoons unsalted butter, divided
1 small onion, small diced
2 stalks celery, small diced
2 cloves garlic, minced
1/2 cup all-purpose flour
2 cups whole milk
3 cups chicken stock
3 cups chopped broccoli
1 cup matchstick carrots
1/2 teaspoon kosher salt
1/4 teaspoon pepper
3 cups freshly shredded sharp cheddar cheese
Instructions
1. In a large pot, melt ½ cup of butter over medium heat. Add diced onion, celery, and garlic. Cook until vegetables are softened.
2. Add in flour and cook for 1-2 minutes. Gradually whisk in milk and chicken stock until smooth.
3. Stir in broccoli and carrots. Season with salt and pepper. Simmer until vegetables are tender.
4. Reduce heat to low and stir in shredded cheddar cheese until melted and creamy.
5. Serve hot and enjoy!
Notes
-For extra flavor, try adding cooked bacon or ham.
– For a healthier option, use low-fat milk and reduce the amount of butter.
