Scale
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Butter, for greasing the pan
- Maple syrup, for serving
Instructions
- Prepare the Pancake Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes, or until small bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, greasing the pan as needed.
- Serve:
- Stack the pancakes and serve warm with butter and maple syrup on top.
Notes
- For extra fluffiness, allow the batter to sit for 5 minutes before cooking.
- You can add chocolate chips or blueberries to the batter for added flavor.
- These pancakes are best served fresh but can be stored in the refrigerator for up to 2 days. Reheat in the microwave or on a hot skillet.
