Description

Recreate the iconic Costco chicken bake at home with this easy copycat recipe! This cheesy, creamy chicken bake is filled with tender chicken, crispy bacon, mozzarella, and Caesar dressing, all wrapped in a soft, golden dough. It’s perfect for a quick meal or a fun family dinner that tastes just like the Costco food court favorite!

Ingredients

Units Scale
  • 2 large chicken breasts, cooked and shredded
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • 1/2 cup Caesar dressing
  • 1 package pizza dough (store-bought or homemade)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Instructions

  1. Prepare the Chicken and Bacon:
    1. Cook the chicken breasts by grilling, baking, or sautéing until fully cooked. Shred the chicken using two forks.
    2. Cook the bacon in a skillet until crispy, then crumble it into small pieces.
  2. Prepare the Filling:
    1. In a large bowl, combine the shredded chicken, crumbled bacon, mozzarella cheese, Parmesan cheese, and Caesar dressing. Season with salt, pepper, garlic powder, and Italian seasoning. Mix well to combine.
  3. Assemble the Chicken Bake:
    1. Preheat your oven to 375°F (190°C).
    2. Roll out the pizza dough on a lightly floured surface into a rectangle (about 12×8 inches).
    3. Spread the chicken and bacon mixture evenly over the center of the dough, leaving a border around the edges.
    4. Carefully fold the sides of the dough over the filling, then fold the ends to seal it into a rectangle or log shape.
  4. Bake:
    1. Place the chicken bake seam-side down on a baking sheet lined with parchment paper. Brush the top with olive oil for a golden, crispy finish.
    2. Bake for 20-25 minutes, or until the dough is golden brown and the cheese inside is melted and bubbly.
  5. Serve:
    1. Let the chicken bake cool for a few minutes before slicing. Serve as a main dish or with a side salad for a complete meal

Notes

  • You can substitute the Caesar dressing with ranch dressing if preferred.
  • To make this recipe even easier, use a pre-cooked rotisserie chicken for the filling.
  • If you want a slightly crispy crust, you can brush the dough with a little garlic butter before baking.
