Description

This Classic French Beef Bourguignon recipe is perfect for family dinners and holidays. Tender chunks of beef are simmered in a rich red wine sauce with bacon, vegetables, and herbs, creating a flavorful and hearty dish that pairs perfectly with mashed potatoes.

Main Ingredients:

  • 3 pounds beef brisket or chuck steak cut in big chunks
  • Salt and pepper
  • 8 bacon strips chopped in big pieces
  • 1 carrot sliced thick
  • 1 celery stick sliced
  • 5 garlic cloves minced
  • 3 tablespoons tomato paste
  • 2 tablespoons all-purpose flour

Additional Ingredients:

  • 3 cups pearl onions (around 12)
  • 3 cups red wine
  • 3 cups beef stock
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon parsley chopped
  • 2 bay leaves
  • 2 tablespoons butter
  • 3 cups button mushrooms halved

Instructions

  1. Season the beef: Season the beef chunks with salt and pepper.
  2. Cook the bacon: In a large pot, cook the chopped bacon until crispy. Remove and set aside.
  3. Sear the beef: In the same pot, sear the beef chunks until browned on all sides. Remove and set aside.
  4. Cook the vegetables: Add the carrot, celery, and garlic to the pot and cook until softened.
  5. Add the tomato paste and flour: Stir in the tomato paste and flour until combined.
  6. Combine ingredients: Return the beef and bacon to the pot. Add pearl onions, red wine, beef stock, thyme, parsley, bay leaves, and butter.
  7. Simmer: Cover and simmer for 2-3 hours until the beef is tender.
  8. Add mushrooms: Add the mushrooms and cook for an additional 30 minutes.
  9. Serve: Serve the beef bourguignon with fresh herbs and mashed potatoes.
