Main Ingredients:
- 3 pounds beef brisket or chuck steak cut in big chunks
- Salt and pepper
- 8 bacon strips chopped in big pieces
- 1 carrot sliced thick
- 1 celery stick sliced
- 5 garlic cloves minced
- 3 tablespoons tomato paste
- 2 tablespoons all-purpose flour

- 3 cups pearl onions (around 12)
- 3 cups red wine
- 3 cups beef stock
- 1 tablespoon fresh thyme chopped
- 1 tablespoon parsley chopped
- 2 bay leaves
- 2 tablespoons butter
- 3 cups button mushrooms halved
Instructions
- Season the beef: Season the beef chunks with salt and pepper.
- Cook the bacon: In a large pot, cook the chopped bacon until crispy. Remove and set aside.
- Sear the beef: In the same pot, sear the beef chunks until browned on all sides. Remove and set aside.
- Cook the vegetables: Add the carrot, celery, and garlic to the pot and cook until softened.
- Add the tomato paste and flour: Stir in the tomato paste and flour until combined.
- Combine ingredients: Return the beef and bacon to the pot. Add pearl onions, red wine, beef stock, thyme, parsley, bay leaves, and butter.
- Simmer: Cover and simmer for 2-3 hours until the beef is tender.
- Add mushrooms: Add the mushrooms and cook for an additional 30 minutes.
- Serve: Serve the beef bourguignon with fresh herbs and mashed potatoes.
