For the pasta salad
- 1 box farfalle noodles
- 1 cup cherry tomatoes
- 1/2 large English cucumber
- 1 bag frozen corn
- 1/2 cup red onion
- 1/4 cup chopped cilantro
- 1 lime, zested
For the Green Goddess Dressing
- 1 bunch cilantro
- 2 tbsp olive oil
- 1 avocado
- 3 limes, juiced
- 1 cup plain Greek yogurt
- 1 tbsp Trader Joe’s Green Goddess Seasoning
- 1/4 cup shaved parmesan
- 1 tsp sriracha
Instructions
- Cook the farfalle noodles according to package instructions. Drain and set aside to cool.
- In a large bowl, combine cherry tomatoes, cucumber, corn, red onion, chopped cilantro, and lime zest.
- In a blender, combine cilantro, olive oil, avocado, lime juice, Greek yogurt, Green Goddess seasoning, parmesan, and sriracha. Blend until smooth.
- Pour the dressing over the pasta salad and toss to combine. Serve chilled.
Notes
- You can add grilled chicken or shrimp to make this salad a complete meal.
- Feel free to adjust the amount of sriracha based on your spice preference.
