Scale
- 1 box (15.25 oz) yellow cake mix
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 1 large egg
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 1/4 cup (50g) powdered sugar (for rolling)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. - Make the Cookie Dough:
In a large bowl, combine the cake mix, softened cream cheese, butter, egg, vanilla extract, and almond extract. Beat everything together until smooth and well combined. The dough will be thick and sticky. - Form the Cookies:
Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in powdered sugar to coat it generously. - Bake the Cookies:
Place the coated cookie balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the cookies are lightly golden around the edges but still soft in the center. - Cool and Serve:
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- These cookies are best enjoyed when still soft and gooey.
- You can substitute the yellow cake mix with a lemon cake mix for a zesty twist.
- Store the cookies in an airtight container at room temperature for up to 5 days.
