  • 1 pinch salt
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon cinnamon
  • 1 teaspoon matcha green tea
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 6 drops almond extract
  • 120 g heavy whipping cream
  • 1 cup natural pistachio butter
  • 6 oz white chocolate
  • 3 medium eggs

For the chocolate ganache topping:

  • 1/3 cup heavy cream
  • 2.3 oz dark chocolate
  • 1 teaspoon honey
  • 3 tablespoons chopped pistachios

Instructions

  1. Prepare the chocolate crust: Crush Oreo cookies and mix with melted butter. Press into a springform pan.
  2. Make the white chocolate pistachio filling: Combine cream cheese, sugar, salt, vanilla, cinnamon, matcha, lemon zest, lemon juice, almond extract, whipping cream, pistachio butter, white chocolate, and eggs. Pour over crust.
  3. Create the chocolate ganache topping: Heat cream, pour over dark chocolate and honey. Spread over the cheesecake and sprinkle with chopped pistachios.
