- 3/4 cup granulated sugar
- 1 pinch salt
- 2 teaspoons vanilla extract
- 1/8 teaspoon cinnamon
- 1 teaspoon matcha green tea
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice
- 6 drops almond extract
- 120 g heavy whipping cream
- 1 cup natural pistachio butter
- 6 oz white chocolate
- 3 medium eggs
For the chocolate ganache topping:
- 1/3 cup heavy cream
- 2.3 oz dark chocolate
- 1 teaspoon honey
- 3 tablespoons chopped pistachios
Instructions
- Prepare the chocolate crust: Crush Oreo cookies and mix with melted butter. Press into a springform pan.
- Make the white chocolate pistachio filling: Combine cream cheese, sugar, salt, vanilla, cinnamon, matcha, lemon zest, lemon juice, almond extract, whipping cream, pistachio butter, white chocolate, and eggs. Pour over crust.
- Create the chocolate ganache topping: Heat cream, pour over dark chocolate and honey. Spread over the cheesecake and sprinkle with chopped pistachios.
