Instructions
Melt the Chocolate and Butter
- In a heatproof bowl, melt the chocolate chips and butter together using a microwave in 30-second intervals, stirring in between, until smooth. Let it cool slightly.
Mix the Wet Ingredients
- In a large bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until light and fluffy. Slowly pour in the melted chocolate mixture and stir until combined.
Combine the Dry Ingredients
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually fold this into the wet ingredients until a thick, brownie-like dough forms.
Chill the Dough
- Cover the dough and refrigerate for 30–45 minutes until firm enough to handle.
Shape the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop about 2 tablespoons of dough, flatten slightly, and place a chunk of dark chocolate in the center. Wrap the dough around the chocolate, sealing it completely.
Bake to Perfection
- Place cookies on the baking sheet, leaving space between them. Bake for 9–11 minutes, until the edges are set but the centers are still soft.
Cool and Serve
