Cookie Crust:
- 1 cup crushed chocolate chip cookies
- 2 tablespoons melted butter
Cookie Dough Filling:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil or butter
- 1/2 cup unsalted butter, softened
- 1/3 cup brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup heat-treated all-purpose flour
- 2 tablespoons milk
- 1/2 cup mini chocolate chips
- Extra chocolate chips for garnish
Instructions
- Prepare Cookie Crust: Mix crushed chocolate chip cookies with melted butter. Press into cupcake liners.
- Make Cookie Dough Filling: Cream butter and sugars, then add vanilla, flour, and milk. Fold in mini chocolate chips.
- Fill Cups: Melt semi-sweet chocolate with coconut oil, pour into cookie crusts, then add cookie dough filling. Top with extra chocolate chips.
- Chill: Refrigerate until set, then enjoy!

- For a shortcut, use store-bought cookie dough for filling.
